Chickpeas are a rich plant based protein with plenty of fiber to spare. Roasted Chickpeas go well on your salads, top off so many entrees, or as a simple protein packed snack all by themselves.
1 can Chickpeas (Garbanzo Beans)
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
1/4 tsp Chili Powder
1/4 tsp Cayenne Pepper
1 Tbsp Olive Oil
Preheat oven to 400°
Pour can of chickpeas into a colander and rinse. Dry Chickpeas in a towel.
In a mixing bowl, combine all ingredients.
Stir gently so as not to break up beans.
Pour into a baking dish lined with parchment paper.
Put into the oven for a total bake time of 30 minutes. Take out and stir every ten minutes until your chickpeas have turned a rich gold color.
Spoon directly onto your dish or put in a bowl with a towel to catch excess oil and enjoy as a snack.
Try experimenting with your spices by adding 1/2 tsp of rosemary, cilantro, or basil to your mixing bowl.
