Anyone for an afternoon coffee? There’s nothing quite like an afternoon coffee, good conversation, and chocolate. These chocolate oatmeal cookies hit the spot and packed a bit of protein with almonds and powdered peanut butter.
Ingredients:
1/4 cup Coconut Oil melted
1/2 cup Sugar (or sweetener of your choice)
1/4 cup Dark Cocoa Powder
1/4 cup Powdered Peanut Butter
1/4 cup Unsweet Vanilla Almond Milk
1 Egg
1/4 tsp Salt
1/2 tsp Baking Soda
1/2 cup Unsweetened Shredded Coconut
1/2 cup Blanched Almond Flour
1/2 cup Old Fashioned Oats
2 Tbsp Coconut Flour

Preheat oven to 350°
In your mixing bowl mix, by hand or with your hand mixer, oil, sugar, cocoa powder, peanut butter, milk, and egg until cocoa is totally mixed in. Add remaining ingredients and mix by hand until just combined.
Prepare a cookie sheet with parchment paper. Drop cookies by tablespoon full onto your pan about an inch apart.
Bake in oven for 12-15 minutes. The tops should be almost crisp to touch.
Pull the cookies off the pan, leaving them on the parchment, onto a cooling rack and cool for 5 minutes. Cookies with be crisp on the outside and gooey brownie-like on the inside. Enjoy right away or store in an air tight container once completely cooled.
