Buns! How are you eating your burger?

Going to a grain-free or gluten-free diet usually means you are eating a lot of lettuce wraps. This is a super way to get some extra greens without taking away from the room in your belly for your protein. Think of the bread to burger ratio in a traditional hamburger- most of the time you have filled up on bread and there isn’t enough room for all the nutritious veggies and protein. So- yay for lettuce wraps- we love ’em!

Sometimes you just want to have a burger with a bun though. This recipe is not a traditional bun, but let’s face it… most grain-free and gluten-free options are not the same and that is what we’re striving for! This recipe has a great flavor thanks to the nutritional yeast and spices, and it is a delicious addition to your burger!

Beyond your burger, this “bun” is great to have with your soup, or as avocado toast.

Ingredients:
1 egg beaten
1 Tbsp Nutritional Yeast
1/2 tsp Garlic Powder
1 tsp Oregano
1/4 tsp Salt
1/2 tsp Baking Soda
1 cup Blanched Almond Flour
1-2 Tbsp Coconut Milk

Preheat oven to 400°

Put all ingredients except coconut milk in a mixing bowl and stir together. Add coconut milk one tablespoon at a time to moisten the dough. Should seem sticky, but not runny.

Prepare a sheet pan with parchment paper. Place your dough in the middle of the pan. Use a second piece of parchment on top of dough and either, with a rolling pin or by hand, spread dough to make a rough oval shape, about 1/4 inch thick.

Take off top piece of parchment and put your pan in the oven to bake for 10-12 minutes. The top of your bread should be darkening to a light brown.

Take out of the oven and let cool on the sheet pan. Slice into 6 squares.
