Delicious Date Bars- sugar free, gluten free, dairy free

Dates are amazing little gems! They don’t exactly look like the most beautiful fruit, but there is so much sweet packed into them and so much you can do with them! They are the main ingredients in date bars (as you have probably guessed). These sweets will disappear so quickly, you’ll be making another batch again soon as they’ll become a staple to make in your kitchen each week.

Dried medjool dates are soft and incredibly sticky. Their sugars become more concentrated as they dry, which further increases their sweetness. Dates are packed with antioxidants and anti-inflammatory capabilities. As a super alternative to sugar, these little sweet fruits are a treat, they are hefty on carbs and calories. Ingredients:
12 oz Dried Pitted Medjool Dates
2 Tbsp Coconut Oil
1 tsp finely ground Sea Salt
1 cup Whole Almonds
1/2 cup Pecan Halves
2 Tbsp 100% Dark Baking Cocoa
1/4 tsp ground Cinnamon

Before you begin, be sure to squeeze each date before adding it to your food processor to ensure they are free from pits and stems. In your food processor, combine dates and coconut oil. A sticky ball will form. Stop.

Next, add all remaining ingredients. Blend until nuts are chopped and your mixture looks grainy.

Line an 8″x8″ pan with parchment. Pour your mixture into the pan and use a spoon or spatula to firmly push it down in the pan. Cover and refrigerate for 30 minutes.

Use a knife to cut into individual servings.
Cover and store in the refrigerator up to a week. (If they last that long)

Alternative: Add 2 Tbsp peanut butter and 1/4 cup dark chocolate chips to your recipe for a peanut-buttery treat!
