Sometimes the best cookies come from me looking in the cupboard and literally having to find substitutes for almost every ingredient! This was one recipe just like that. This cookie has an amazing flavor. I love to substitute almond extract for vanilla in recipes and this one it did not disappoint!
This is a gluten free, dairy free recipe, but there is sugar! Guess what? Everything can fit in your diet. This cookie is not a meal… it is a sweet. However, feel free to half the sugar or use your favorite substitute.
My alternative to the white and dark sugars would be to substitute 1/3 cup honey or maple syrup and a teaspoon of cinnamon. Start to experiment with different ingredients in your recipes and get comfortable with your skills to tailor recipes to your needs.


Ingredients:
1/2 cup coconut oil
1/4 cup white sugar
1/2 cup dark brown sugar
1 tsp almond extract
1 egg
1/4 tsp salt
1/4 tsp baking soda
1 cup almond flour
1/2 cup each: shredded coconut, old fashioned oats, raisins, chocolate chips, chopped walnuts
Preheat oven to 350°
With your electric mixer cream softened coconut oil and sugar. Add egg and almond extract and blend. Add salt, baking soda, and almond flour.
Add remaining ingredients and mix by hand.
Drop by heaping tablespoons onto cookie sheet lined with parchment.
Bake for about 15 minutes.
