Muffins that are so good you’ll be raving and wondering how you ever cooked without dark cherries! Cherries make your chocolate taste even richer, if you can imagine that! You’ll love each bite with the sweet tart of dark cherry. This is a super easy recipe to satisfy your sweet tooth without feeding into that sugar monster. My whole family followed their noses into the kitchen while these were baking- as you can see, I could barely get a photo before they were all gone!

Ingredients-
2 Eggs
1 Tbsp Chia Seeds
½ cup Applesauce (unsweetened)
¼ cup Coconut Milk
¼ cup Cocoa (I use special dark baking cocoa-100% cocoa)
1 cup blanched Almond Flour
½ tsp Vanilla Extract
¼ tsp Salt
1 Tbsp Baking Powder
1 ½ cups frozen pitted Dark Cherries
Preheat oven to 400*
In a mixing bowl beat eggs. Add chia seeds, applesauce, and coconut milk. Mix.
Stir in cocoa, almond flour, vanilla, salt, and baking powder.

In a separate bowl microwave cherries until soft. Use a pastry knife to crush and break up the cherries. Drain excess cherry juice into a separate container to save for another recipe. Fold cherries into the batter.

Spoon into muffin papers.
Bake for 20 minutes. Take out and cool on a rack.
